About this dish
Tomatoes hollowed out and filled with minced meat, part-cooked rice and the chopped tomato flesh, baked with basil, oregano or herbes de Provence. Tomates farcies are a summer staple of French home cooking, when tomatoes are at their best. Cooking the rice halfway first lets it finish in the tomato juices as it bakes.
Ingredients
Preparation
Preheat the oven to 180°C (350°F).
Slice the tops off the tomatoes and scoop out the flesh, keeping the shells intact.

Fill the tomato shells with the mixture and replace the tops.
Bake for 35-40 minutes until the tomatoes are soft and the filling is cooked through.
