About this dish
Chicken pieces cooked in wine with bacon, mushrooms, onion, carrot, rosemary and thyme. Coq au vin is a classic of French home cooking, traditionally made with an older rooster that needs hours of slow braising. This version takes 30 minutes with regular chicken, so the sauce is lighter than a long-simmered one.
Ingredients
Preparation
Brown the chicken pieces in a large pot, then set aside.
In the same pot, fry the bacon until golden, then add the chopped onion and carrot and cook until softened.
Stir in the tomato paste and cook for 1 minute.
Return the chicken to the pot, pour in the wine, and add the mushrooms, rosemary, and thyme.
Cover and simmer gently for 35-40 minutes until the chicken is tender and the sauce has thickened.
Season to taste and serve.
