About this dish
Chickpea falafel with onion, garlic, parsley, cumin and coriander, fried until crisp. Falafel is street food across the Middle East, and the traditional version starts from soaked dried chickpeas rather than canned ones. Canned chickpeas and a little flour make this version quicker and help the mixture hold together. An air fryer can replace deep frying.
Ingredients
Preparation
Drain the chickpeas well and dry them with paper towel.
In a food processor, blend the chickpeas, onion, garlic, parsley, cumin, coriander, and salt until coarsely combined (not a purée).
Stir in the flour to bind the mixture, then shape into small balls or patties.
Heat the oil to 175°C (350°F) and fry the falafel in batches for 3-4 minutes until deep golden and crisp.
Drain on paper towels and serve warm.
