About this dish
Thinly sliced red cabbage braised with apple, onion, apple juice, sugar, cinnamon and a bay leaf until soft and sweet-sour. Braised red cabbage is a winter side dish across Germany, Alsace and much of northern Europe, often served with sausages, pork or game. Salting and sugaring the cabbage for 15 minutes first draws out water and helps it soften.
