About this dish
Cod simmered in a coconut milk and korma curry sauce with cherry tomatoes, served with rice. The korma sauce is ready-made, which is why it takes 15 minutes; korma is the mild, creamy style of curry. Cod cooks quickly, so do not simmer it for long or it falls apart.
Ingredients
Preparation
Thaw the cod if needed. Bring a pot of salted water to a boil and cook the rice according to the package instructions. Drain once done and keep warm.
Meanwhile, heat a drizzle of olive oil in a second pot. Add the tomatoes and cook for 2 to 3 minutes over high heat.
Meanwhile, cut the cod into large chunks.
Add the cod chunks, curry sauce and coconut milk. Season with salt and pepper and mix gently. Bring to a light simmer, then cover and cook for 6 minutes.
Serve the fish curry with the rice. Add a few cilantro leaves if you have some, and adjust the seasoning to taste. Enjoy!
