About this dish
A salad of green beans, cherry tomatoes, marinated artichokes, black olives and canned mackerel fillets in a mustard and cider vinegar dressing. The beans boil for 7 to 8 minutes and cool before mixing. Mackerel is an oily fish rich in omega-3, and its strong flavor is balanced by the vinegar.
Ingredients
Preparation
In a pot of boiling salted water, cook the green beans for 7 to 8 minutes. Once done, drain them, then plunge them into cold water to stop the cooking.
Meanwhile, wash and halve the cherry tomatoes.
If needed, drain and quarter the artichokes.
Prepare the vinaigrette. In a bowl, mix the mustard, cider vinegar and 1 tablespoon of olive oil per person. Season with salt and pepper.
In a salad bowl, add the green beans, mackerel, cherry tomatoes, drained olives and artichokes. Pour the vinaigrette over everything and mix. Adjust the seasoning to taste, it's ready!
