About this dish

Salmon brushed with harissa and served with a couscous tabbouleh of chickpeas, cucumber, mint, shallot and lemon. Harissa is a North African chili paste, so the salmon gets heat and a little smokiness. The couscous is cooked in stock, which flavors the tabbouleh from the start.
