About this dish
A pasta salad with small cubes of fresh salmon seasoned with lemon, olive oil and parsley, plus zucchini, ready in 15 minutes. The recipe uses grattini, a small egg pasta, but any small pasta shape works. A little saffron in the cooking water, as the tip below suggests, adds flavor and color.
Ingredients
Preparation
Prepare the seasoning: remove the skin and bones from the salmon and cut it into small cubes.
Place the salmon in a bowl and season with a pinch of pepper, a few drops of lemon juice, olive oil, and chopped parsley.
Wash the zucchinis and cut them into cubes.
In a pan, heat a bit of olive oil with the garlic clove and a sprig of parsley.
Add the zucchini, salt, and pepper, and cook over medium heat for 6-7 minutes.
Towards the end of cooking, add the salmon and sauté everything for 2-3 minutes.
Cook the pasta in salted water. Once drained, toss them with a bit of olive oil to prevent sticking.
In a large bowl, mix the pasta, salmon, and zucchini. Season with olive oil, lemon juice, and mix well to combine the ingredients.
Finish with a bit of chopped fresh parsley and let the salad rest in the refrigerator.
Tips
If you like saffron, you can add it to the pasta cooking water for an extra flavor and a more intense color.
