About this dish
A poke bowl with raw salmon, rice, avocado, cucumber and radish, dressed with soy sauce and rice vinegar. Primavera means spring in Italian and Spanish, and the radish and cucumber give it a fresh spring character. Because the salmon is raw, buy fish sold for raw eating and keep it cold until serving.
Ingredients
Preparation
In a pot of boiling salted water, cook the rice according to the package instructions. Drain at the end of cooking. Set aside.
Meanwhile, prepare the marinade. In a bowl, mix half of the soy sauce and half of the rice vinegar.
If needed, remove the skin from the salmon. Cut it into cubes.
Add the salmon cubes to marinate, so they soak up the mixture. Keep chilled.
Wash and cut the cucumber into thin rounds.
Remove the skin from the avocado, then cut it into slices.
Wash and cut the radishes into thin slices.
Once the rice is cooked and drained, add the remaining soy sauce and rice vinegar. Mix.
In a bowl, serve the rice with the salmon, avocado, cucumber and radishes. Drizzle with the rest of the marinade and add a few cilantro leaves if you have some. It's ready!
