About this dish
Quinoa cooked in boiling water and mixed with peas, surimi, avocado and feta, dressed with lemon and olive oil. Rinse the quinoa before cooking if the packet says so, to remove its naturally bitter coating. Feta adds salt, so taste before seasoning.
Ingredients
Preparation
In a pot of boiling salted water, cook the quinoa according to the package instructions. Drain at the end of cooking.
Meanwhile, add the peas to a bowl. Bring water to a boil in a pot or kettle and pour it over the peas. Let sit for 3 to 4 minutes before draining.
Meanwhile, cut the surimi sticks on a diagonal.
Halve the avocado, remove the skin, then cut it into slices.
Prepare the vinaigrette. In a bowl, mix the lemon juice and 1 tablespoon of olive oil. Season with salt and pepper.
Cut the feta into cubes.
In a bowl, mix the quinoa, peas and half of the vinaigrette.
Serve the pea quinoa in a deep plate or bowl with the feta, avocado and surimi. Add a lemon wedge if you have any left and drizzle with the remaining vinaigrette. It's ready!
