About this dish

Small pearl pasta with flaked fresh salmon and finely diced zucchini cooked gently in olive oil. Garlic and lemon are added to the adult portions only, so the same pan feeds a baby too. The pasta is the kind sold as acini di pepe or risoni, small enough for young children to manage.

Ingredients

Bubble pasta (small pearl pasta, e.g. acini di pepe or risoni)200 g
Fresh salmon200 g
Zucchini2
Olive oil1 tbsp
Garlic (adult portion only)1 clove
Lemon (for juice, adult portion only)1

Preparation

1.

Peel and finely dice the zucchini.

2.

Heat the olive oil in a pan and gently cook the zucchini over low heat for 8-10 minutes until very soft, without browning.

3.

Cook the bubble pasta in unsalted water according to the package instructions, then drain.

4.

Remove the skin and any bones from the salmon and steam or poach it gently for 6-8 minutes until it comes apart easily with a fork.

5.

Flake the salmon into small pieces, checking carefully for bones.

6.

Set aside a plain portion of pasta, zucchini and salmon for the baby, mashing or cutting it into small soft pieces.

7.

For the rest of the family, sauté the garlic briefly in the pan, then toss everything together with a squeeze of lemon juice and season to taste.

Tips

For babies starting solids, skip the garlic, lemon, and any added salt in their portion, and mash the pasta and salmon to a texture they can manage.
