About this dish
Beef meatballs with grated onion and garlic, served with a cucumber and tomato salad and a skyr sauce. Skyr is a thick Icelandic cultured dairy product, similar to strained yogurt, and it works like a yogurt sauce with a sharper taste. Grating the onion and garlic into the meat keeps the meatballs moist.
Ingredients
Preparation
If needed, thaw the ground beef. In a large bowl, grate the onion and garlic. Add the ground beef, season with salt and pepper, then mix.
Shape the mixture into meatballs.
Wash and cut the cherry tomatoes in half and the cucumber into cubes.
In a bowl, add the cherry tomatoes and cucumber. Add a drizzle of olive oil, season with salt and pepper. Add basil if you have some and mix.
In a hot pan, cook the meatballs for 5 minutes over high heat in a little olive oil. Turn them regularly. They should be nicely browned.
Add the skyr to the bottom of a plate with a drizzle of olive oil, add the tomato and cucumber salad, then the meatballs, it's ready!
