About this dish
Beef meatballs bound with egg, breadcrumbs and parmesan, simmered in tomato basil sauce and served on semolina. The egg and breadcrumbs keep the meatballs tender, and the shallot adds sweetness. Semolina is the couscous-style grain here, and it soaks up the sauce.
Ingredients
Preparation
Peel and thinly slice the shallot.
Prepare the beef meatballs. In a bowl, mix the ground beef, egg, shallot, breadcrumbs and parmesan. Season with salt and pepper.
Shape the beef meatballs by rolling them between your hands. Set aside on a plate.
Heat a drizzle of olive oil in a pan over high heat. Add the meatballs and cook for 5 minutes, turning them, until nicely browned.
At the end of cooking, add the tomato sauce. Season with salt and pepper. Cover and simmer for 3 to 4 minutes over low heat, stirring occasionally.
Meanwhile, bring water to a boil. In a bowl, mix the semolina with salt, pepper and a drizzle of olive oil. Pour over an equal volume of the boiling water. Cover and let it swell for 5 minutes, then fluff the semolina with a fork.
Serve the semolina in a deep plate with the meatballs in tomato sauce. Sprinkle with parmesan if you have any left, and adjust the seasoning to taste. It's ready!
