About this dish
Fried rice with scrambled egg, peas, diced ham and spring onions, seasoned with soy sauce and sesame oil. Riz cantonais, as it is served in France, is a Westernized take on Chinese fried rice, with ham and peas as its signature additions. Cold, day-old rice fries better than freshly cooked rice, which clumps in the wok.
Ingredients
Preparation
Beat the eggs and scramble them in a lightly oiled wok, then set aside.
Heat the oil in the wok and stir-fry the peas and diced ham for 2-3 minutes.
Add the cooked rice, breaking up any clumps, and stir-fry for 3-4 minutes.
Return the scrambled egg to the wok, add the soy sauce and sesame oil, and toss to combine.
Stir through the sliced spring onions and serve.
