About this dish
Chicken breast in a sauce of peanut butter, coconut milk and garlic, served over rice with cucumber. It is inspired by satay sauce from Southeast Asia, which is made the same way with peanuts and coconut milk, and the cucumber gives a cool contrast. Stir the peanut butter into warm coconut milk so it melts smoothly.
