About this dish

Ricotta and spinach tortellini in a leek and cream sauce with garlic and herbes de Provence, topped with walnuts. Leeks are rinsed after slicing, as the recipe says, because grit hides between the layers. Walnuts add crunch to the soft pasta and creamy sauce.

Ingredients

Ricotta and spinach tortellini400 g
Leek1 kg
Heavy cream200 ml
Garlic1 clove
Herbes de Provence4 pinches
Walnuts (optional)40 g
Olive oil4 tsp

Preparation

1.

Trim the ends of the leek then thinly slice it. Place it in a colander and rinse thoroughly to remove any grit.

2.

Heat a drizzle of olive oil in a pan over medium heat. Add the grated garlic and leek. Season with salt and pepper and add the Herbes de Provence. Cook for 6 to 7 minutes, stirring.

3.

Meanwhile, in a pot of boiling salted water, cook the tortellini according to the package instructions. Drain at the end of cooking and set aside.

4.

Check the leeks are cooked, then add the cream. Mix well and continue cooking for 1 more minute.

5.

Add the tortellini and mix again.

6.

Serve the creamy leek tortellini in a deep plate. Sprinkle with crushed walnuts if you have some, then adjust the seasoning to taste. It's ready!
