About this dish
Pan-cooked chicken breast over a grain medley with cucumber, tzatziki and fresh mint. A grain medley is a ready-mixed blend of grains, such as rice, quinoa and wheat, that cooks in a few minutes. Tzatziki works as both sauce and dressing for the bowl.
Ingredients
Preparation
Prepare the grain medley according to the package instructions.
Meanwhile, heat a drizzle of olive oil in a pan over medium heat. Add the chicken. Season with salt and pepper and cook for 4 to 5 minutes on each side, until nicely golden.
Wash and cut the cucumber into small cubes.
Wash and finely chop the mint.
Serve the grain medley in a deep plate or bowl, topped with the chicken, cucumber and tzatziki. Season with salt, pepper, a drizzle of olive oil and the chopped mint. It's ready!
Tips
For a real treat, we recommend making your own tzatziki: mix Greek yogurt with cucumber and chopped fresh mint.
