About this dish
A cold salad of semolina with tomato, cucumber, red onion, mint and parsley, dressed with lemon and olive oil. This is the French taboulé, a grain-heavy salad. The original Lebanese tabbouleh is mostly chopped parsley with a little bulgur, so the proportions are very different. The semolina only needs boiling water poured over it and a few minutes to swell.
