About this dish
A vegetarian burger: buns filled with fried eggplant rounds, hummus, sun-dried tomatoes, feta and arugula. The eggplant plays the role of the patty, and it needs a generous amount of olive oil in the pan since it soaks it up. Hummus and feta give the burger creaminess and salt.
Ingredients
Preparation
Wash and cut the eggplant into thin rounds.
Heat a pan with a generous drizzle of olive oil. Cook the eggplant rounds for 3 minutes on each side over medium heat. Season with salt and pepper. Set aside on paper towel.
Keep the same pan, add a drizzle of olive oil if needed, and toast the burger buns for 1 minute, with the cut faces against the pan. (You can also toast them on a grill for 3 minutes.)
Cut the sun-dried tomatoes into thin strips.
Assemble the burgers. Spread hummus on both sides. Add the eggplant slices, sun-dried tomatoes, crumbled feta and rocket. Season with salt and pepper and add a small drizzle of olive oil.
Close the burger, serve, it's ready!
