About this dish

Soft scrambled eggs, whisked gently with a little milk and cooked slowly in butter in a non-stick pan. Salt and pepper go only into the adult portions, so the same pan can serve a baby's portion too. For babies, cook the eggs through.

Ingredients

Eggs8
Butter2 tbsp
Milk (optional, for creaminess)2 tbsp
Salt (adult portion only)1 tsp
Pepper (adult portion only)1/2 tsp

Preparation

1.

Crack the eggs into a bowl and whisk gently with the milk until just combined. Avoid overbeating.

2.

Melt the butter in a non-stick pan over low heat.

3.

Pour in the eggs and cook slowly over low heat, stirring constantly with a spatula, pushing the curds from the edges to the center.

4.

Remove from the heat while the eggs are still soft and slightly runny; they will keep cooking in the residual heat.

5.

Set aside a small portion for the baby before seasoning.

6.

Season the remaining eggs with salt and pepper to taste and serve warm.

Tips

For a baby's portion, skip the salt and pepper entirely and cook the eggs a little longer until fully set with no runny parts. Mash with a fork before serving.
