About this dish
Pizza dough spread with pesto, topped with cherry tomatoes and burrata, baked at 240°C (465°F). Burrata comes from Puglia, in southern Italy: a mozzarella shell filled with cream and shreds of curd, which gives the pizza a soft, creamy center against the crisp base. This is a quick pizza, 15 minutes in all.
Ingredients
Preparation
Preheat the oven to 240°C (465°F). Wash the cherry tomatoes and halve or quarter them, depending on their size.
Roll out the pizza dough on a baking tray. Spread the pesto over the dough, then top with the tomatoes.
Drizzle with olive oil. Season with salt and pepper, then bake for 10 minutes at 240°C (465°F).
Once the crust is golden, take the pizza out of the oven and top with torn fresh burrata. Add a few fresh basil leaves if you have some, and serve with a green salad dressed to taste. Enjoy!
Tips
You can make your own pizza dough and pesto from scratch for an extra-fresh touch, but a good store-bought version works just as well for a fast dinner.
