About this dish
Smoked sausage and bacon lardons with Auvergne-style green lentils and shallot. Sausage with lentils is a French home classic, traditionally made with salt pork and simmered for a long time; using cooked lentils makes it a 13-minute version. Green lentils from Auvergne hold their shape well.
Ingredients
Preparation
Peel and finely chop the shallots.
Heat a drizzle of olive oil in a pot over medium heat. Add the shallots and cook for 1 minute, stirring.
Add the lentils and bacon lardons. Mix, then cover and continue cooking for 5 to 6 minutes over low heat.
Meanwhile, heat a drizzle of olive oil in a pan over medium heat. Add the sausages and cook for 8 to 10 minutes, flipping halfway through.
Check the lentils are cooked, then serve them on a plate with the sausages. Add a few parsley leaves if you have some, and adjust the seasoning to taste. It's ready!
