About this dish
Pork ribs roasted in the oven at 200°C (400°F) with potatoes and carrots, seasoned with garlic, thyme, rosemary and paprika. Everything cooks on one tray, and the fat from the ribs flavors the vegetables underneath. At 55 minutes it is longer than the quick weeknight recipes, but most of that time is spent in the oven.
Ingredients
Preparation
Preheat the oven to 200°C (400°F).
Peel and cut the potatoes and carrots into large chunks, then toss them with the olive oil, chopped herbs, minced garlic, salt, and pepper.
Season the ribs on both sides with salt, pepper, and paprika.
Spread the potatoes and carrots in a single layer on a baking tray and place the ribs on top.
Roast for 45-50 minutes, turning the ribs halfway through, until they are tender and the vegetables are golden.
Serve hot.
Tips
Toss the potatoes generously with olive oil and fresh herbs before roasting for extra flavor and crispiness.
