About this dish
Merguez sausages served with couscous and a ready-made tajine sauce. A tajine is a North African stew, named after the conical clay pot it is traditionally slow-cooked in; this version uses a jarred preparation, so it takes 15 minutes instead of hours. Merguez are spicy lamb or beef sausages, pricked before cooking so they do not burst.
Ingredients
Preparation
Prick the merguez sausages and cook them in a hot pan for 8-10 minutes, turning occasionally, until browned and cooked through.
Meanwhile, warm the pre-made tajine preparation in a saucepan over medium heat, stirring occasionally, according to the package instructions.
Bring 250 ml of water per person to a boil. Place the couscous in a bowl, season with salt, cover with the boiling water, cover the bowl and let it swell for 5 minutes, then fluff with a fork.
Serve the couscous topped with the warm tajine preparation and the merguez sausages.
