About this dish
A burger of ground beef pressed flat on a very hot pan, topped with cheddar, pickles and red onion in a brioche bun. Pressing gives the patty a crisp, browned edge, and iceberg lettuce, ketchup and mustard finish it. Smash burgers come from American diners, and the technique depends on high heat and a thin patty. It takes about 10 minutes.
Ingredients
Preparation
Peel and thinly slice the red onion.
Cut the pickles into thin rounds.
In a bowl, add the ground beef. Season with salt and pepper, then mix well with your hands.
Shape two balls of ground beef per portion, using your hands.
Heat a drizzle of olive oil in a pan over medium heat. Add the meat balls and press them flat and thin with a spatula. Grill for 2 minutes on each side.
Add a slice of cheddar on one of the patties. Top with the second patty and add the second slice of cheddar on top. Cover and cook for 1 to 2 minutes.
Meanwhile, melt a small piece of butter in a second pan over medium heat. Toast the burger buns for 1 to 2 minutes, with the cut faces against the pan, until golden.
Spread the burger buns with ketchup and mustard. Add the cheddar-topped patties, followed by the onion, pickles and lettuce. Close the burger and enjoy immediately. It's ready!
