About this dish
Chicken breast in bite-size pieces, coated in cornstarch and stir-fried with bell pepper and pineapple in a sweet and sour sauce. The sauce is vinegar, soy sauce and sugar, a staple of Cantonese-style restaurant cooking, and pineapple is a common Western addition. The cornstarch coating helps keep the chicken tender and lets the sauce cling to it.

Preparation
Cut the chicken into bite-sized pieces and toss lightly in half the cornstarch.
Heat the oil in a wok and stir-fry the chicken until golden and cooked through; set aside.
Stir-fry the sliced bell pepper for 2-3 minutes.
Whisk together the vinegar, soy sauce, sugar, the pineapple juice from the can, and remaining cornstarch.
Return the chicken to the wok with the pepper and pineapple chunks, pour in the sauce, and stir until thickened and glossy.
Serve hot.
