About this dish
Sliced flank steak stir-fried with onion, ginger and soy sauce, finished with lime and served over rice with arugula. It is Thai-inspired rather than traditional: there is no fish sauce, chili or Thai basil, so the flavor comes from soy, ginger and lime. Flank steak is best sliced thinly against the grain and cooked briefly.

Preparation
Bring a pot of salted water to a boil and cook the rice according to the package instructions. Drain once done and keep warm.
Meanwhile, peel and thinly slice the onion.
Cut the beef into thin strips.
Prepare the marinade. In a bowl, mix the soy sauce, ginger, lime juice and sliced onion. Add the beef strips and mix. Let sit for 5 minutes.
Heat a drizzle of olive oil in a pan over high heat. Add the beef and marinade. Cook for 1 to 2 minutes, until the sauce thickens.
Serve the rice with the marinated beef. Add chopped chives if you have some, and the rocket. Adjust the seasoning to taste, it's ready!
