About this dish
A grilled cheese sandwich with cheddar, tomato slices and crisp bacon on country bread, cooked in a pan until golden. Tomato and bacon is the pairing of a BLT, and here the cheese turns it into a hot sandwich. Slice the tomato into rounds and pat them dry, since wet tomato makes the bread soggy.
Ingredients
Preparation
Wash and slice the tomatoes into rounds.
In a very hot pan, add the bacon slices and cook for 2 minutes on each side over high heat. They should become almost crispy. Transfer to a paper towel. Keep the cooking fat in the pan.
Spread the mayonnaise on both slices of bread.
Add half of the grated cheddar onto one slice of bread, followed by the bacon and tomato rounds. Sprinkle with the remaining grated cheddar, then close the sandwich with the other slice of bread, mayo side up.
Heat the same pan over medium heat. Add the sandwich and cook for 2 to 3 minutes on each side, until the cheese is melted and the bread is golden. Watch that it doesn't burn!
Cut the sandwich in half if you like and enjoy it warm. It's ready!
Tips
For an extra treat, we recommend enjoying this grilled cheese with a fried egg or a warm soup on the side.
